Best Banana Flapjacks

Sweet banana, creamy walnuts, soft dates, and crunchy oats… these flapjacks are yummy, easy to make and healthy too! They are great to make if you are short of time, and are a good way to use up over ripe banana. They can also simply be made gluten or dairy free with the use of gf oats and df margarine.

Ingredients:

6oz Margarine (plus some for greasing)

2tbs Runny Honey

9oz Oats

Sprinkle of coconut (optional)

3oz Walnut pieces

3oz Dates, chopped

1 Banana, mashed

Method:

Preheat your oven to Gas Mark 4 / 180c / 350F. Line a tray bake tin approx 28 – 19 cm with greaseproof paper and margarine. Next, put the margarine and honey in a saucepan and melt on the hob while you mix the rest of the ingredients; oats, coconut, walnut pieces and chopped dates into a large mixing bowl. Now mash one banana and stir into the bowl with the margarine and honey mixture. Once combined, spoon into your tray and flatten down with the back of a metal spoon. Bake for 25 – 30 mins or until firm to touch. Now enjoy! 😊😁😋

If you prefer a stronger banana taste, try replacing 3oz of dates with another banana. 🍌
