Apricot and Pistachio Cookies – GF & DF

Theses cookies are a wonderful combination of healthy fruit, nuts, oats and yumminess! As well as being simple to make, vegan and gluten free, they are also a good recipe for diabetics as they are low in sugar. They can be made using gluten and dairy ingredients if you prefer, but I like to stick without. 🍪😁 I hope you enjoy:

Ingredients:

100g Dairy Free Margarine

50g Sugar

1 tsp Vanilla Extract

100g Gluten Free flour

1tbs Gluten Free Baking Powder

100g Gluten Free Oats / Oatmeal

50g Shelled Pistachio Nuts

50g Chopped, Dried, Apricots

3 tbs soya milk

Method:

Simply mix the ingredients together in the order shown, spoon out approx 24 biscuit size dollops onto a greased baking tray and bake on Gas Mark 4 for 20 – 25 mins, until slightly golden. Cool on a wire rack before serving. They are great for picnics or as an afternoon snack. 😋
